Ingredients

salmon

kosher or culinary rock salt

apples 

apple juice

Directions

take a greased non stick sheep pan. lay whole salmon filet, skin side down, onto sheet pan. bury the fish in salt..literally bury it no need to skimp. let the fish sit in the salt for 1-1.5 hours, depending on the size of the fish. rinse completely but be gentle with it as it started to cook in the salt. lay fish back onto clean greased sheet pan. slice apples into 1/8-1/4inch disks. cover the filet with the apple slices. pour a small amount of apple juice into the bottom of the pan. dont use too much juice, you dont want to boil your salmon you want to steam it. wrap the whole pan in aluminum foil and place into 250 degree oven for 1-1.5 hours depending on size of the fish. it will be done when the fish flakes evenly and easily.
