Ingredients
2 T. butter
4 venison loin steaks
Juice & peel of one large fresh lemon
1 cup chicken broth
4 T. butter
1 cup fresh blueberries
ground cinnamon
ground ginger
salt & pepper
(For an added treat, use WildCheff Cinnamon Chili Blend instead if cinnamon, or WildCheff Ginger Citrus Blend instead of ginger!!! Available at WildCheff.com)
Directions
Melt 2 tablespoons butter in large skillet and cook venison loin steaks until med. rare and browned on both sides. Set aside & keep warm. De-glaze skillet with lemon juice, peel, and broth. Cook over high heat to reduce liquid to 1/2 cup. Lower heat to medium, add 4 tablespoons butter. Add blueberries, generous dashes of cinnamon, ginger, salt & pepper. Pour blueberry sauce over steaks and serve.
