Ingredients
1 1/2 cups whipping cream
1 T WildCheff Cinnamon Chile blend
Dash of cumin
2 1/2 T sugar
3 ounces grated bittersweet chocolate
3 egg yolks
WildCheff Espresso Sugar

Directions
Preheat oven to 350
Bring first 4 ingredients to a boil, remove from heat and add chocolate. Blend until smooth.
Pour into souffle cups.
Place cups in large baking pan, add hot water to the pan until it reaches halfway up sides of the cups. Bake 35 minutes.
Remove cups from water, cover and cool.
Sprinkle Espresso Sugar over tops, then caramelize with a kitchen torch, or put them under the broiler until sugar melts and caramalizes.
Then dig in!
