Ingredients

1 deer ham, cut into about 1" cubes

3 cups buttermilk

seasoned flour

salt and pepper, to taste

Directions

Bone out a deer ham, and cut into bite sized pieces, about 1" cubes. Place cut up venison into large ziplock freezer bag, add buttermilk and mix it up well in bag, close up and place in fridge for at least 24 hours...and up to 48 hours. Remove from fridge, dump into large collender in sink. Use big spoon to stir around untill most all of the buttermilk has drained out. Pour meat out onto large flat pan and spread out single layer. season with salt and pepper to taste. Dredge meat in seasoned flour, coating well.....drop pieces into hot oil in large cast iron dutch oven or pot, and fry till browned and crispy. Drain on paper towels, and serve with Cattlemans gold sauce. The buttermilk tenderizes the meat, as well as makes for good coating for the flour. It is the best tasting way to cook venison, hands down.
