Ingredients

For the Slovakia: 

1 lb of large diced wild boar or organic pork

1 C of WildCheff Blueberry Balsamic Vinegar

2 Tbsp of WildCheff Rosemary Olive Oil

1 Tbsp of WildCheff Mediterranean Blend

1 Tbsp of Ground Cumin

1 tsp of ground cinnamon

4 garlic cloves, minced

1 pinch of sea salt

Pita bread

 For the Yogurt Sauce: 

1 C of plain yogurt

1 cucumber, shredded

1 tsp of fresh lemon juice

1 garlic clove, fine minced

½ C of mint, chopped

½ C of flat leaf parsley, minced

Fresh ground pepper

 

In a bowl, mix all ingredients and refrigerate.

Directions

Take first set of Slovakia ingredients and combine them in a large bowl. Place in refrigerator and let marinade for 2-3 hours.

 

Soak bamboo skewers in water for 30 minutes. Remove marinated meat from refrigerator and place onto skewers. (Heat outdoor grill up while preparing the skewers)

 

Place skewered meat onto heated grill, and baste with marinade as skewers brown up on grill.

 

When meat is finished cooking, remove meat from skewers and place pieces of meat on pita bread that you have quickly warmed up. (You can do this by places pieces onto paper plate and covering with paper towel, and then heating in microwave. Grilling them is also an option)

 

Drizzle yogurt sauce over skewered meat. Serve with simple salad of cucumbers, sliced cherry tomatoes and thinly sliced red onions that you have tossed in a bowl with your favorite vinaigrette.
