Ingredients
2 lbs fresh Grouper or similar fish fillets
3 Shallots
Olive Oil
Butter
3 Garlic cloves
1 1/4 cup Italian Bread Crumbs
1/2 cup Parmesan cheese
Directions
Pick out any bones, rinse+pat dry. Place fillets in baking pan coated with Olive Oil. Chop and dice shallots+garlic. Divide and save 1/4 of shallots+garlic mixture for later. In a saute' pan cook large portion of shallots+garlic in 4-5 tbls of olive oil until translucent. Spoon mixture over fillets, top with breadcrumbs, parmesan cheese and pats of butter.
Bake 10 minutes in oven preheated to 450. Check to ensure fillets start to turn white and flake apart. Then turn broiler on for a few minutes to crisp and brown topping. While fish is cooking, take remaining shallots+garlic and saute' in butter in sauce pan. Drizzle over fish when it comes out of the oven before serving.
