Ingredients

This is so moist and tasty. Especially good with a big plate of Fired Catfish.

1/2 cup butter, melted 1/4 cup shredded Monterey Jack cheese
1/2 cup white sugar 1/4 cup shredded cheddar cheese
2 eggs 1/2 cup all-purpose flour
1/2 (15 oz.) can creamed corn 1/2 cup yellow corn meal
1- 4 oz. can of chopped jalapenos, 2 teaspoons baking powder
1/8 teaspoon salt

Directions

Preheat oven to 300 degrees. Butter a cast iron skillet or a 9x13 baking dish. Put in oven so it is hot when you add the batter and it will make a wonderfully crunchy crust.
In a large bowl, beat together butter and sugar. Beat in eggs, one at a time. Blend in corn, jalapenos and cheeses.




In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to the wet ingredients and stir until blended.
Pour into pre-heated pan and bake for 1 hour, or until a toothpick inserted into the center of the pan comes out clean.

 

Eat with fried Catfish and Fried taters!
