Ingredients

1 gallon water

1.5 cup pickling salt

3 cups apple juice

wood chips

Directions

quick and easy brine for smoking salmon. the amount of brine you will need to make varies on your brining container and amount of fish you need to soak.  you need to make enough to completely submerge the salmon.

heat 1 gallon of water to a boil.

 add pickling salt. you want to use pickling salt because it dissolves totally and you wont have a salty grit on the bottom of your brining container

stir until the salt is dissolved.

add apple juice and a hand full of you smoking wood chips. I use fruit wood.

allow to cool COMPLETELY.

for brining filets I recomend leaving soak for 4 hours. if you are brining whole fish leave in brine for 8 hours, or I like to do it overnight, put them into brine before bed fire up the smoker in the morning.
