Sloppy Venison

Ingredients

3 lbs gound Venison
2 TB vegetable oil
 4 cloves garlic, minced
 4 large celery stalks, finely diced
 1 green pepper, diced
 1 large onion, finely diced
 1 ( 24oz) bottle catsup-about 3 cups
 1- 1/2 tsp salt
 1 tsp pepper
1/4 cup vinegar
3/4 tsp dry mustard
3 TB brown sugar
1/2 to 1 cup water ( opt.)

Directions

Heat the vegetable oil in a x-large skillet. Cook, stirring frequently, until the onion is softened, the garlic, celery, green pepper & onion. (about 10 min)  Remove cooked vegetables to another dish.
In same pan, cook ground venison, breaking up large pieces, until  just browned. Add the onion mixture along with the remaining ingredients.
Partially cover & simmer until the sauce is slightly thickened, about 20 min.
Stir occasionally so doesn't stick.  If too thick add 1/2 cup -1 cup of water.
Serve immediately or refrigerate until needed.
Best served the next day so flavors can blend.
Serves up to 8 (Serves 4-5 big dudes)
